Beetroot and Pomegranate Seed Salad

It will definitely work well with less leaves, but as I like to eat a lot of greens I’ve piled them in! Pomegranate seeds are now easily available from most supermarkets, in little tubs, and so make it now a doddle to add these and add more valuable antioxidants. Pomegranates amazingly help to reduce atherosclerotic plaque, cholesterol, lower blood pressure, I love to say eat a rainbow, and todays salad is mainly oranges and reds. 

For the salad

1/2 chopped orange pepper

3 tbsp pomegranate seeds

1 sweet potato chopped and steamed

water cress



black eyed beans

Dressed with:

1/4 raw beetroot

2 tbsp of hemp oil

1/4 tsp of Dijon Mustard

1 tbsp of red wine vinegar

Blended together and then toss the salad in it.
