Coconut dahl

I love dahl, it’s such a simple meal to make, and packed full of goodness. This one is rich in beta-carotene easily added with the sweet potato and is anti-inflammatory by adding the turmeric which also gives it also a lovely yellow colour. Fabulously vegan and helps you to reach your 5 or 7 a day!

1 red onion chopped finely

1 tblsp of coconut oil

1/2 cup of red lentils

200ml of coconut milk

1 cup of vegetable stock

1 sweet potato chopped into small cubes

2 small garlic cloves chopped

1/2 teaspoon of cumin seeds

1/2 teaspoon of ground coriander

1/2 teaspoon of turmeric

I lightly cooked the onion and garlic cloves, added in the spices and heated them through. Then I added the sweet potato, lentils, coconut milk and stock. I put a lid onto it, and left it at low heat to simmer for about half and hour. Then I was starving and couldn’t wait any longer!!

I know my pictures are not that good, but the food does taste lovely and I’m more interested in the taste than what the picture for the blog looks like!!
