Ratatouille

I love ratatouille it’s one of my favourite fast foods to make for an end of day quick dinner. Mind you I am a one pot cook mostly so that makes it more likely to be made.

1 tin of whole plum tomatoes

1 courgette, sliced with a wavy edge from my mandoline!

4 chopped green or black olives

1 small shallot chopped

1/2 a broccoli split into florets

1 red pepper chopped

1 large pinch of hijiki seaweed

1 large handful of broken up bean noodles

2 drops of doTerra Oregano Essential Oil

Sea salt and black pepper to taste.

Sweat off the shallot in a pan over a medium heat, then add the tomatoes cut them up slightly, and add the rest of the ingredients! Allow this to cook on a medium heat ensuring that the noodles are able to soak up the juice from the tomatoes. Cook until it’s all lovely and soft, that takes about 35 minutes.
