Everyone is coming to the clinic with lingering coughs and colds, and I’m clear that either people’s immunity is getting worse or these bugs are getting increasingly virulent. Where do you start, well it has to be by building strong foundations through diet. This stew contains olive oil which is great for fungal infections, onion and garlic known for their antibacterial properties, carrots great for beta carotene,
1 glug of olive oil
1 chopped onion
1 chopped carrot
1-2 cloves of garlic, it depends on how bad your cold is and how much you want to get rid of it.
pinch of dried ground chilli rather fabulous for opening up the circulation
pinch of dried ground ginger is anti inflammatory
pinch of dried marjoram
bouquet of garni
squeeze of lemon or 2 drops of lemon essential oil, lemon is antibacterial
2 can of white beans
1 litre of stock I use vegetable you could use chicken if you wanted
kale a couple of good handfuls
You will know by now how I love to make 1 pot easy cook meals that I can just leave to cook once I’ve prepared the ingredients.
Heat the oil in a pan, cook until transparent the onions and garlic, add the carrot, and cook until softened.
Put in the ground garlic flakes, and ginger, marjoram, put the beans in and add the stock and lemon. Cook for about 20 – 30 minutes until the carrot is soft, then I blended some of the stew up and added the kale after I had done that just to lightly cook until its wilted.
