Sweet potato salad

At the talk last night I was asked what did I eat, and so I thought I would share today’s lunch with you.

Sweet potato salad

1 cup of steamed cubed sweet potato until soft all the way through.

5-7 Olives with herbs and garlic

1/2 can of butter beans.

2-3 handfuls of mixed green leaves.

I used a simple French dressing over the top, with a little bit of black pepper.
