Quinoa is a powerhouse of a seed, and very easy for you to digest, so a great alternative to rice, spicing it up adds flavour and valuable nutrients. A body building recipe which includes iron, magnesium, zinc and manganese, and that’s just the quinoa! The addition of the garlic gives you a natural antibiotic proven in research, has been shown to reduce blood pressure.
I’ve put some fresh ginger in as well, so this is an anti-inflammatory dish!
1 tblsp olive oil
1 garlic clove crushed
1 tsp cumin seed
1″fresh ginger root
1/4 tsp turmeric powder
2 red peppers
125g quinoa
1/2 can of chick peas cooked
500-600ml vegetable stock
handful of sultanas
Heat the olive oil in a pan, cumin and put the garlic in to lightly fry. Put the ginger, peppers, turmeric powder into the food processor with the cutting blade, and cut into small pieces.
Put the mix from the food processor into the pan with the oil, garlic and cumin, and mix together. Add the vegetable stock, the sultanas, and chickpeas, and bring to the boil, reduce the heat and simmer for 20 minutes, until all the liquid has been absorbed.
Season to taste with salt and pepper.
